Huevos Rancheros

Now that we have a source of fresh eggs we almost have more eggs than we know what to do with.  One of LJ's favorite things to do with eggs is make huevos rancheros.  They are simple to make and very flexible.

This time I made a small batch of slow cooker beans, fried up a couple of tortillas, and fried an egg over medium for each tortilla.  We topped each with cheddar cheese and salsa to finish them off.

I'm not a huge fan of these (mostly because I don't like runny egg yokes) but LJ really loves them so I don't mind making them occasionally.
