LJ and I purchased a winter CSA (
community supported agriculture) share from the farm. We have wanted to join a CSA for quite some time with the hope that it will encourage us to eat more vegetables. In that spirit, I had to figure out what to do with the celeriac that showed up in our refrigerator this week.
Celeriac has a mild celery flavor and a quick Google search provided plenty of soup options. However I was hoping to make a side dish so I settled on Jamie Oliver's
Smashed Celeriac recipe.
It turned out pretty well but will probably try using it for a soup or roasted if we ended up with it again in our CSA share.
